WHAT IS TARTIFLETTE?


Although Tartiflette feels like an ancient, medieval recipe passed down through generations of French mountain herders, its origin story is actually a brilliant piece of 1980s marketing. Looking to boost lagging sales, the union of Reblochon cheese makers in the snowy Savoie region of the French Alps took Péla—a traditional, simple potato-and-cheese dish—and gave it a gourmet upgrade. They added smoky bacon (lardons), onions, and a splash of white wine, rebranding the recipe as "Tartiflette" (after tartifla, the local word for potato). Promoted heavily to winter tourists, it became an overnight sensation on the ski slopes, transforming a clever sales pitch into France's ultimate, quintessential winter comfort food.
